SOUPER EASY!

Warm Up January Soup

This is great to keep you on track with detoxing from the holidays and it will warm your insides up on a cold winter day.  My family likes spicy and I like Italian so I combined them to come up with a soup to satisfy our taste-buds.

Ingredients

  • 6 boneless chicken breasts cut into large chunks
  • 6 cups chicken broth low sodium
  • 1 Tbsp. cajun seasoning
  • 2 tsp. poultry seasoning
  • 1 small onion, diced
  • 3 stalks celery, diced
  • 1 small can of green chilis
  • 1 28 ounce can Italian tomatoes
  • 1 Tbsp. olive oil
  • 1 1/2 cups dried noodles of your choice
  • 3/4 cup heavy cream, optional

Instructions

  1. Boil the chicken in the broth with the seasonings, adding water if needed to cover the chicken in a soup pot.  Meanwhile, saute the onion and celery in a skillet with the oil until tender. (I like to de-glaze the pan with 1 Tbsp. of white wine, but that is totally optional.) Add it to the chicken and stir in the green chilis and tomatoes.  When the chicken is fully cooked, add the noodles until they are al' dente. Reduce heat to low and add the cream last.
