I love Italian food!  This is my comfort food when I need to snuggle up with a blanket and a good book.

Brown 1.5 lb. of beef stew meat in oil and 2 dashes of Worcestershire sauce in a pot.

Now add 3 cups of chicken broth to the meat and cook, covered, on low for an hour or until the meat is tender.  Meanwhile, saute half an onion in a tsp. of oil until browned.

Now add 4 pressed garlic cloves and 1/3 cup red cooking wine to de-glaze the pan.  Let the wine cook out completely and the onions should have a red tint.

Put the onion mixture in with the meat and add 2 cans of Italian diced tomatoes, and a tsp. of basil and a tsp. of oregano.  Add a dash of pepper and 3 cups of chopped kale leaves.  Lastly, add 1 pkg. of cheese tortellini and cook the amount of time directed on the package.  That’s it!  The wonderful thing about this is that you can adjust the amounts of ingredients to your taste.  Sometimes I use fresh tomatoes or fresh basil and extra beef or extra chicken broth.  It’s very versatile.
