First of all, this one needs a warning!!!  I ate so much of this that I had to skip dinner.  And I’m not much of  a cake person!  This one has an amazing texture and is not too sweet.  I love this cake!!!!!  And I will let you know the secret to this cake at the bottom of the post!!

I needed one last taste of summer, before fall comes. This is a lower fat cake because it has no oil in the batter. And if I would just top my piece with frozen yogurt it would really be low fat and healthy but one of my favorite things is cream cheese so if you are bad like me, here’s the recipe. Or you can top it with frozen yogurt if you have more self-control.  And, it’s one of the easiest cakes to make- ever!!!

  • Beat 2 eggs
  • Add a 20 ounce can of undrained, crushed pineapple
  • Add 1 cup brown sugar
  • Mix well then add 2 cups flour
  • Add 2 tsp. baking soda
  • Pour into 9×13 pan sprayed with oil
  • Bake at 350 degrees for 45 minutes or till golden

For frosting, blend in processor:

  • 8 ounce of cream cheese
  • 2 Tbsp. of butter
  • 1/2 tsp. vanilla
  • 1 cup of powdered sugar

In case you didn’t catch my secret to this, it’s the brown sugar instead of white sugar.  It makes it stay moist and delicious!
