5 Minute Taco Dip Supper

My teenage boys were hungry and I didn't feel like cooking, so I came up with this easy dish.  So simple, good, and full of healthy stuff.

Ingredients

  • 1 can black beans 15 ounces
  • green chilis 2 ounces
  • cream cheese or sour cream 4 ounces
  • 1 can cooked chicken 12.5 ounces
  • 1 can mexican style diced tomatoes 15 ounces
  • 2 cups pepper jack cheese or cheese of choice shredded
  • 2 cups chopped kale or lettuce
  • hot sauce optional

Instructions

  1. Drain the water out of the canned items and then dump the black beans and chilis into a large dish.  Dump in the chicken and drop in the cream cheese and tomatoes.  Spread it around.  Sprinkle the cheese and kale on top.  Add hot sauce (if desired) and serve with tortilla chips.
